PAXIMADAKIA OR PAXIMADIA—“GREEK BISCOTTI”

Biscotti (singular biscotto), or Paximadia (singular paximadi)  are twice-baked biscuits made dry and crunchy through cutting the loaf of dough while still hot and fresh from baking and baking them again. Such nonperishable food was particularly useful during journeys and wars and when refrigeration was not around. It is delicious dipped in coffee or hot beverage of your choice. Irresistible! In the Greek culture, paximadakia is a staple used at celebrations of life, but also as a morning or mid-afternoon snack with coffee or tea. Available in a variety of dried fruits with or without walnuts, almonds, or just plain.  Ambro-Sia’s paximadakia are semi-soft (my own personal creation), plain (just walnuts) or with dried  fruit and walnuts or almonds.  They come plain (not dipped in chocolate) or chocolate dipped.

STORAGE TIPS: Once sealed in an FDA approved bag biscotti can stay fresher than when exposed to the air.  Biscotti is twice baked and therefore reducing the temperature extends the shelf-life to approximately nine months in the freezer. However, the ones with the fruit are best when consumed within one to two months at room temperature and/or four months when stored in the refrigerator.  May freeze to retain fresh up to six  or nine months if completely sealed.

INGREDIENTS:  Bleached Wheat Flour, (Malted Barley Flour (improves yeast baking), niacin, iron, thiamin, mononitrate, riboflavin, folic acid), Mazola Oil (Corn), Granulated Sugar, Eggs,  Baking Powder (Aluminum-free) (monocalciumphosphate, sodium bicarbonate, corn starch), Soda (sodium bicarbonate), Vanilla, Brandy, Lemon juice always fresh, Lemon Rind, and Almonds.

The bright gold of an October pumpkin, these soft biscotti can substitute a pumpkin cake and they stay fresh longer. Flavored with pumpkin pie spice and cinnamon. A hot cup of your favorite drink paired with a pumpkin biscotti is the perfect accompaniment! I make my own pumpkin butter.

Would you agree with me that when you think of Red Velvet flavored anything your mind automatically thinks of Valentine’s Day? This is why I created the Red Velvet Biscotti. My basic recipe without bottles of red food coloring, but  (something better) and it’s so incredibly good, soft, and there is just something about it that screams special!
